These creamy espresso popsicles turn a vanilla latte into a refreshing frozen treat. Whole milk, heavy cream, espresso, and vanilla syrup create a rich coffee flavor, while optional corn syrup and sweetened condensed milk help keep the texture smooth and less icy.

Directions

  1. Brew approximately 4 ounces of fresh ESPRESSO, or about 4 standard shots. Set it aside for several minutes to cool slightly.
  2. In a large measuring cup or mixing bowl, combine 1½ cups WHOLE MILK with ½ cup HEAVY WHIPPING CREAM, maintaining the creator’s ratio of approximately three parts milk to one part cream.
  3. Pour in the cooled espresso and add about ¼ cup VANILLA SYRUP, or adjust the amount to suit your preferred sweetness.
  4. For a creamier texture with fewer ice crystals, whisk in 2 tablespoons LIGHT CORN SYRUP and ¼ cup SWEETENED CONDENSED MILK. These ingredients are optional but help the popsicles remain softer and less icy after freezing.
  5. Whisk the mixture thoroughly until the condensed milk is completely dissolved and the espresso is evenly blended throughout. Taste and add more vanilla syrup if desired.
  6. Using a small funnel or measuring cup with a spout, carefully pour the espresso mixture into 8 clear POPSICLE SLEEVES. Leave about 1 inch of empty space at the top of each sleeve so the mixture can expand while freezing.
  7. Seal each sleeve securely and lay them flat on a freezer-safe tray to prevent leaking.
  8. Freeze for at least 8 hours or overnight, until completely firm.
  9. Remove one popsicle from the freezer, allow it to sit at room temperature for 1–2 minutes if needed, and gently push the frozen espresso mixture upward through the sleeve before serving.
