Ingredients:
- 2.5 lbs. bone-in, skin-on chicken thighs or drumsticks
- 1 olive oil
- 3 unsalted butter
- 1 yellow onion, diced
- 2 shallots, halved
- 2 carrots, peeled and chopped
- 4 cloves garlic, minced
- 0.5 cup dry white wine (Sauvignon Blanc or Pinot Grigio)
- 1.25 cups low-sodium chicken broth
- 1 tsp fresh thyme
- 1 tsp fresh rosemary
- 0.5 cup heavy cream
Instructions
- ◊ Sear chicken: In a Dutch oven, heat olive oil and 1 tbsp butter. Sear chicken until golden on both sides. Set aside.
- ◊ Sauté veggies: Add remaining butter. Stir in onions, shallots, carrots, and garlic. Cook until softened, about 6–8 minutes.
- ◊ Deglaze: Pour in the white wine and let simmer 2 minutes. Add chicken broth, thyme, and rosemary.
- ◊ Simmer: Return chicken to the pot. Cover and simmer on low for 30–40 minutes, until tender.
- ◊ Finish with cream: Uncover, stir in heavy cream, and simmer 5 more minutes. Season to taste with salt and pepper.
- ◊ Serve: Garnish with extra herbs and enjoy with mashed potatoes, rice, or crusty bread.
