Coq au Vin Blanc (Chicken Braised in White Wine)

Instructions

  • Sear chicken: In a Dutch oven, heat olive oil and 1 tbsp butter. Sear chicken until golden on both sides. Set aside.
  • Sauté veggies: Add remaining butter. Stir in onions, shallots, carrots, and garlic. Cook until softened, about 6–8 minutes.
  • Deglaze: Pour in the white wine and let simmer 2 minutes. Add chicken broth, thyme, and rosemary.
  • Simmer: Return chicken to the pot. Cover and simmer on low for 30–40 minutes, until tender.
  • Finish with cream: Uncover, stir in heavy cream, and simmer 5 more minutes. Season to taste with salt and pepper.
  • Serve: Garnish with extra herbs and enjoy with mashed potatoes, rice, or crusty bread.
