Cilantro Lime Chicken

Juicy, zesty, and full of fresh flavor, this cilantro lime chicken is perfect for the grill, skillet, or oven, with a tangy sauce that ties it all together.

- In a small food processor, blend oil, lime juice, garlic, cilantro, salt, pepper, cumin, and honey to make the marinade.
- Place the chicken breasts in a ziplock bag or dish. Pour half the marinade over the chicken, coating both sides. Marinate for at least 30 minutes (up to 4 hours) in the fridge.
- When ready to cook, whisk the remaining marinade with a cornstarch slurry and set aside.
- Skillet method: Heat 1 tsp oil in a skillet over medium heat. Cook chicken 7–8 minutes per side until browned and cooked through (165°F). Pour in reserved marinade with slurry, simmer to thicken, then rest chicken in the sauce.
- Grill method: Grill chicken over medium heat 7–8 minutes per side, basting with marinade often, until cooked through.
- Oven method: Preheat oven to 375°F. Bake chicken 18–20 minutes, adding reserved marinade with slurry during the last 5 minutes to thicken.
