Chicken Caesar Sandwiches
This Chicken Caesar Salad Sandwich takes everything you love about the classic Caesar salad and wraps it in the cozy embrace of a toasted, cheesy sandwich. Grilled chicken, creamy Caesar dressing, and crunchy lettuce combine with melted mozzarella and parmesan for a handheld masterpiece. Perfect for lunch or a casual dinner, this recipe is as satisfying as it is indulgent!
Ingredients
For the Sandwich:
- 2 grilled chicken breasts (seasoned with salt, pepper, and garlic powder)
- 4 brioche buns or sandwich rolls
- 4 slices mozzarella cheese
- ½ cup shredded parmesan cheese
For the Caesar Salad Filling:
- 2 cups chopped romaine lettuce
- ¼ cup Caesar dressing (store-bought or homemade)
- ½ teaspoon lemon juice (optional, for brightness)
- ¼ cup croutons, crushed slightly
For Toasting:
Instructions
- Prepare the Chicken:
- Preheat a grill or grill pan over medium heat.
- Season the chicken breasts with salt, pepper, and garlic powder.
- Grill the chicken for 5–6 minutes per side, or until fully cooked (internal temperature of 165°F). Remove from the grill and let rest for 5 minutes before slicing into thin strips.
- Make the Caesar Salad Filling:
- In a mixing bowl, combine the chopped romaine lettuce, Caesar dressing, and lemon juice (if using).
- Toss until evenly coated. Add the croutons and toss gently to incorporate. Set aside.
- Prepare the Buns:
- In a small bowl, mix the softened butter with the minced garlic.
- Spread a thin layer on the cut sides of the buns. Place the buns cut-side down in a skillet or on a grill over medium heat and toast until golden brown, about 2 minutes.
- Melt the Cheese:
- Once the buns are toasted, lay a slice of mozzarella cheese on the bottom half of each bun.
- Sprinkle a tablespoon of shredded parmesan on top of the mozzarella. Return the buns to the skillet (cheese side up) and cover with a lid. Heat for 1–2 minutes, just until the cheese is melted and gooey.
- Assemble the Sandwiches:
- Place slices of grilled chicken on top of the melted cheese on each bottom bun.
- Spoon a generous portion of the Caesar salad mixture over the chicken. Add the top bun to complete the sandwich.
- Serve:
- Serve the sandwiches immediately while warm, with extra Caesar dressing on the side for dipping if desired.
- Pair with fries, a small salad, or a fresh fruit cup for a complete meal.
Tips
- For a tangy twist, add a few slices of tomato or a dash of balsamic glaze.
- If you love extra crunch, sprinkle more croutons or parmesan crisps directly on the chicken before adding the salad.
