Candied Pecans

These Southern Candied Pecans are roasted until fragrant, coated in a thick vanilla-sugar mixture, and baked with butter until sweet, crisp, and beautifully candied. Let them cool completely for an easy homemade treat that’s perfect for snacking, sharing, or adding to a holiday spread.
Ingredients:
- 1 lb pecans
- 2 egg whites
- 1 cup sugar
- 1/2 cup unsalted butter
- 1 tsp vanilla
- 1/4 tsp salt

Directions
- Preheat the oven to 325°F.
- Spread the 1 POUND PECANS evenly across a sheet pan.
- Roast the pecans for 15 MINUTES.
- While the pecans roast, beat the 2 EGG WHITES with a hand mixer or stand mixer until stiff peaks form.
- Add the 1 CUP SUGAR, 1 TEASPOON VANILLA, and 1/4 TEASPOON SALT to the whipped egg whites.
- Gently mix until combined. The coating should remain thick.
- Add the roasted PECANS to the egg-white and sugar mixture and toss until thoroughly coated.
- Add the 1/2 CUP UNSALTED BUTTER to the sheet pan, then spread the coated pecans evenly over the pan.
- Return the pan to the oven and bake for 30 MINUTES.
- Toss the pecans every 10 MINUTES as they bake, mixing them with the butter as it melts across the pan.
- Remove the pecans from the oven and allow them to COOL COMPLETELY before removing them from the pan and serving.
