Directions

  1. Preheat the oven to 325°F.
  2. Spread the 1 POUND PECANS evenly across a sheet pan.
  3. Roast the pecans for 15 MINUTES.
  4. While the pecans roast, beat the 2 EGG WHITES with a hand mixer or stand mixer until stiff peaks form.
  5. Add the 1 CUP SUGAR, 1 TEASPOON VANILLA, and 1/4 TEASPOON SALT to the whipped egg whites.
  6. Gently mix until combined. The coating should remain thick.
  7. Add the roasted PECANS to the egg-white and sugar mixture and toss until thoroughly coated.
  8. Add the 1/2 CUP UNSALTED BUTTER to the sheet pan, then spread the coated pecans evenly over the pan.
  9. Return the pan to the oven and bake for 30 MINUTES.
  10. Toss the pecans every 10 MINUTES as they bake, mixing them with the butter as it melts across the pan.
  11. Remove the pecans from the oven and allow them to COOL COMPLETELY before removing them from the pan and serving.
