Cory Armstead’s Sweet Potato Pie is a classic Southern dessert made with oven-baked sweet potatoes, brown sugar, warm spices, vanilla, and plenty of butter. The creamy spiced filling goes into a pre-baked crust before baking until set, and Cory recommends finishing every slice with whipped cream.

Directions

  1. Preheat the oven to 400°F.
  2. Bake the 3 LARGE SWEET POTATOES for 1 HOUR, or until completely tender.
  3. Allow the sweet potatoes to cool enough to handle, then remove the flesh and transfer it to a large mixing bowl.
  4. Add the EVAPORATED MILK, 1 CUP GRANULATED SUGAR, 1/2 CUP BROWN SUGAR, CINNAMON, NUTMEG, GROUND GINGER, and GROUND CLOVES.
  5. Add 2 TABLESPOONS VANILLA EXTRACT and 5 TABLESPOONS MELTED BUTTER.
  6. Mix thoroughly until the filling is smooth and well combined. Remove any fibrous sweet potato strands as needed.
  7. Taste the filling, then add the 2 EGGS and finish mixing until fully incorporated.
  8. Pre-bake the PIE CRUST for 10 MINUTES.
  9. Reduce the oven temperature to 350°F.
  10. Pour the sweet potato filling into the pre-baked crust and smooth the top evenly.
  11. Bake at 350°F FOR 30 MINUTES, or until the filling is set.
  12. Allow the pie to cool before slicing, then serve with WHIPPED CREAM.
