Sweet Potato Pie

Cory Armstead’s Sweet Potato Pie is a classic Southern dessert made with oven-baked sweet potatoes, brown sugar, warm spices, vanilla, and plenty of butter. The creamy spiced filling goes into a pre-baked crust before baking until set, and Cory recommends finishing every slice with whipped cream.
Ingredients:
- 3 large sweet potatoes
- evaporated milk
- 1 cup granulated sugar
- 1/2 cup brown sugar
- cinnamon
- nutmeg
- ground ginger
- ground cloves
- 2 tbsp vanilla extract
- 5 tbsp butter (melted)
- 2 eggs
- 1 pie crust
- whipped cream (for serving)

Directions
- Preheat the oven to 400°F.
- Bake the 3 LARGE SWEET POTATOES for 1 HOUR, or until completely tender.
- Allow the sweet potatoes to cool enough to handle, then remove the flesh and transfer it to a large mixing bowl.
- Add the EVAPORATED MILK, 1 CUP GRANULATED SUGAR, 1/2 CUP BROWN SUGAR, CINNAMON, NUTMEG, GROUND GINGER, and GROUND CLOVES.
- Add 2 TABLESPOONS VANILLA EXTRACT and 5 TABLESPOONS MELTED BUTTER.
- Mix thoroughly until the filling is smooth and well combined. Remove any fibrous sweet potato strands as needed.
- Taste the filling, then add the 2 EGGS and finish mixing until fully incorporated.
- Pre-bake the PIE CRUST for 10 MINUTES.
- Reduce the oven temperature to 350°F.
- Pour the sweet potato filling into the pre-baked crust and smooth the top evenly.
- Bake at 350°F FOR 30 MINUTES, or until the filling is set.
- Allow the pie to cool before slicing, then serve with WHIPPED CREAM.
