Transform taco night into a healthy, diabetes-friendly feast! These crispy homemade spring rolls are filled with seasoned ground beef and coleslaw for a satisfying crunch and packed with flavor, perfect for a nutritious lunch.

Directions

  1. Prepare the filling: Dice the 1 onion.
  2. Heat a large skillet or pan over medium heat. Spray generously with avocado oil spray.
  3. Add the diced onion and minced garlic to the pan. Sauté until the onion is translucent and fragrant.
  4. Add the ground beef to the pan. Break it up with a spoon and cook until fully browned. Season with complete seasoning and salt to taste.
  5. Add the entire bag of classic coleslaw to the pan with the cooked beef. Stir well and cook for 2-3 minutes, just until the cabbage begins to wilt slightly. Remove the filling from the heat and let it cool for a few minutes.
  6. Prepare the wraps: Lay a spring roll wrapper flat on a clean surface. Using your fingers or a pastry brush, lightly wet the entire surface with water to make it pliable.
  7. Spoon a portion of the cooled meat and coleslaw mixture onto the lower third of the wrapper. Fold the bottom edge over the filling, then fold in the sides, and roll it up tightly like a burrito.
  8. Repeat with the remaining wrappers and filling.
  9. Wipe the same skillet clean and reheat it over medium heat. Spray again with avocado oil spray.
  10. Place the rolls seam-side down in the pan. Cook for 2-3 minutes per side, or until the wrappers are golden brown and crispy.
  11. Remove from the pan, let cool slightly, and enjoy warm.
