These fudgy protein brownies deliver a shiny crackly top and rich chocolate flavor while packing in extra protein from Greek yogurt, egg whites, and protein powder. They’re perfect for meal prep, satisfy chocolate cravings, and come in at just 83 calories per brownie.
Ingredients:
Wet Ingredients
- 2 medium eggs
- 1/2 cup egg whites
- 3/4 cup 0% Greek yoguet
- 2 tbsp coconut oil (melted)
- 1 tsp vanilla extract (optional)
Dry Ingredients
- 1 - 1 1/2 cups granulated sugar substitute (1:1 substitute, or regular sugar)
- 1/3 cup all-purpose flour
- 1/2 cup cocoa powder (plus 2 tbsp)
- 2 scoops chocolate protein powder (or vanilla protein powder (60 g worth))
- 3/4 tsp baking powder
- chocolate chips (or chunks, optional, for mix-ins and toppings)

Directions
- Preheat the oven to 350°F (175°C).
- In a large bowl, whisk together the eggs, egg whites, Greek yogurt, melted coconut oil, and optional vanilla extract.
- Add the sugar substitute, flour, cocoa powder, protein powder, baking powder, and salt. Mix until completely smooth.
- If using, fold in the chocolate chips or chunks.
- Pour the batter into two small round springform pans or one parchment-lined brownie pan.
- Bake for 20–25 minutes, removing the brownies while they’re still slightly underbaked for the fudgiest texture.
- Allow to cool before slicing and serving.
