Tomato Soup and Grilled Cheese Casserole

This combines everyone’s all time favorite combo- grilled cheese and tomato soup in one dish…. What could be better??!!We used ltd edition Campbells tomato grilled cheese soup but regular tomato soup works too. 12 slices white or sour dough bread Butter Cream cheese 10 thick slices cheddar cheese 2 cans grilled cheese tomato soup or plain tomato soup 1 c tomato juice 2 eggs 1 teaspoon Italian seasoning Garlic powder to taste 1 tomato diced 5 oz Italian blend cheese Butter each slice of bread on one side. Lay 6 slices into a baking dish buttered side down. Spread a thin layer of cream cheese over each slice. Top with the cheddar cheese slices. In a bowl mix together the soup, tomato juice, eggs, seasonings and the diced tomato. Pour half the mixture over the bread. Top with remaining buttered bread, buttered side up, and pour the remaining tomato mixture over top. Sprinkle with cheese and cover. Bake at 375 for about 29-25 minutes. The ultimate comfort food, reimagined! This Tomato Soup and Grilled Cheese Casserole bakes all the cozy, cheesy, tomato-y goodness into one incredible dish.
Ingredients:
- 12 slices white or sourdough bread
- 3 tbsp butter
- 3 tbsp cream cheese
- 10 thick slices cheddar cheese
- 2 cans grilled cheese tomato soup ((or plain tomato soup))
- 1 can tomato juice
- 1 tsp garlic powder (to taste)
- 5 oz Italian blend cheese
Directions
- Butter each slice of bread on one side.
- Lay 6 slices into a baking dish buttered side down.
- Spread a thin layer of cream cheese over each slice.
- Top with the cheddar cheese slices.
- In a bowl, mix together the soup, tomato juice, eggs, Italian seasoning, garlic powder, and the diced tomato.
- Pour half the mixture over the bread.
- Top with remaining buttered bread, buttered side up.
- Pour the remaining tomato mixture over top.
- Sprinkle with Italian blend cheese and cover.
- Bake at 375°F for about 20-25 minutes.
- Remove foil and bake another 12-15 minutes until bubbly.
