Start your day with these delicious and easy Sunrise Tacos! A hearty filling of scrambled eggs, savory ground sausage, and fresh spinach is wrapped in a warm tortilla for the perfect breakfast on the go.
Ingredients:
- 4 large eggs
- 1/2 lb ground breakfast sausage
- 1 cup fresh spinach (roughly chopped)
- 2 green onions (thinly sliced)
- 4 small flour tortillas
- 1 pinch salt (to taste)
- 1 pinch black pepper (to taste)
- 1/4 cup shredded cheddar cheese (optional)
Directions
- In a skillet over medium heat, cook the ground sausage, breaking it up with a spoon until it’s browned and cooked through. Drain any excess grease.
- In a bowl, whisk the eggs with a pinch of salt and pepper.
- Push the cooked sausage to one side of the skillet. Pour the whisked eggs into the other side. Scramble the eggs, folding them gently as they cook.
- When the eggs are nearly set, fold the sausage into them. Add the fresh spinach and cook for another minute, just until the spinach has wilted.
- Warm the tortillas in a dry skillet or microwave.
- Spoon the egg and sausage mixture into the center of each warm tortilla. Top with chopped green onions and serve immediately.
