This Strawberry Hibiscus Refresher combines homemade strawberry syrup, floral hibiscus tea, fresh lime juice, and sparkling water for a vibrant, lightly sweet drink that’s perfect for warm days. Make a batch of the concentrate ahead of time for an easy homemade refresher whenever you need one.
Ingredients:
For the Strawberry Syrup
- 13 oz strawberries (quartered)
- 1 cup water
- 1/2 cup honey
- 1/4 tsp ground vanilla (or vanilla paste)
- 1/4 tsp kosher salt
- 2 1/2 cups water
- 1/2 cup loose-leaf hibiscus tea
- 1/2 cup lime juice
- sparkling water

Directions
- In a large saucepan combine the strawberries, water, honey, vanilla, and salt.
- Bring to a gentle boil over medium heat. Mash the softened strawberries with a fork or potato masher and continue cooking for about 5 minutes.
- Strain the mixture through a fine mesh sieve into a large pitcher to create the strawberry syrup.
- Steep the hibiscus tea in the remaining hot water for 6 minutes, then strain into the pitcher.
- Add the lime juice and stir until well combined.
- Transfer the concentrate to a sealed jar and refrigerate until completely chilled.
- To serve, fill a glass with ice, pour in 2 parts concentrate, then top with 1 part sparkling water.
- Stir gently and enjoy immediately.
