Ingredients:
Steak
- 1 ribeye or sirloin steak
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp freshly ground black pepper
- 1 tsp garlic powder
- 1 tbsp butter (for basting)
Creamy Sauce
- 2 tbsp butter
- 3 cloves garlic (minced)
- 1 1/2 cups heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tsp salt (to taste)
- 1 tsp pepper (to taste)
- 1 pinch nutmeg or chili flakes (optional)
Pasta
- 200 grams fettuccine
- salted water for boiling
Directions
- Cook the Steak:
Season the steak with olive oil, salt, pepper, and garlic powder. Heat a skillet over medium-high heat and sear steak for 3–4 minutes per side. Add butter in the last minute and baste. Let it rest for 5 minutes before slicing. - Boil the Pasta:
Cook the fettuccine in salted water until al dente. Drain and set aside (reserve ¼ cup pasta water if needed). - Make the Sauce:
In a saucepan, melt butter and sauté garlic until fragrant. Add cream, bring to a gentle simmer, then stir in Parmesan. Season with salt, pepper, and optional nutmeg or chili flakes. If it’s too thick, add a splash of pasta water. - Combine & Serve:
Toss pasta in the sauce until well coated. Plate the pasta, top with sliced steak, and drizzle more sauce over it. Garnish with chopped chives or parsley.
