Spicy Cucumber Salad

Crunchy, tangy, and a little bit fiery — this spicy cucumber salad is the perfect refreshing side dish or snack. With a bold chili-onion crunch and a simple umami-packed dressing, it’s addictively good and easy to make.

- (Optional): Make the Homemade Chili Onion Crunch if using, and set it aside in a sealed container.
- Thinly slice the cucumbers and place them in a large bowl. Sprinkle with salt and let them sit for 15 minutes to draw out excess moisture.
- While the cucumbers sit, mix the sauce ingredients together in a small bowl and set aside.
- After 15 minutes, discard the salty liquid from the cucumbers. Use a paper towel to gently blot any remaining moisture.
- Return the cucumbers to the bowl and pour in the prepared sauce. Mix well until all cucumbers are coated.
- Top with the Chili Onion Crunch or a sprinkle of sesame seeds before serving.
