Ingredients
- 2 tablespoons olive oil
- 1 small onion, diced
- 3 garlic cloves, minced
- 1 bunch fresh kale, stems removed, chopped
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon red pepper flakes (optional)
- 1/4 cup vegetable broth or water
- Salt & pepper, to taste
- Splash of apple cider vinegar (for finishing)

Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and cook for 3–4 minutes, until softened.
- Stir in garlic and cook for another 30 seconds.
- Add chopped kale, smoked paprika, and red pepper flakes (if using).
- Pour in broth and cover. Let steam for 5–7 minutes, stirring occasionally.
- Uncover, season with salt and pepper, and cook uncovered for another 2–3 minutes.
- Finish with a splash of apple cider vinegar for brightness.
