Best Smoked Queso Dip Recipe ⬇️ Ingredients: 🔸 32 oz Velveeta, cubed 🔸 8 oz Pepper Jack or Cheddar cubed 🔸 1 lb ground beef, browned and drained 🔸 (2) 10 oz cans Rotel (any flavor) 🔸 ½ cup diced white onion 🔸 2 jalapeños, finely diced 🔸 1 tbsp minced garlic 🔸 Optional: ½ cup (or more) evaporated milk to thin after melting Smoker Instructions: 1. Preheat your smoker to 250°F. 2. In a 9x13 disposable foil pan, add all ingredients. 3. Place the pan on the indirect heat side of the smoker. 4. Close the lid and smoke for 1 to 2 hours, stirring every 15–20 minutes. 5. Once everything is fully melted and combined, stir in evaporated milk if you want it creamier. 6. Directions

  1. Preheat your smoker to 250°F.
  2. In a large cast iron skillet or disposable aluminum pan, combine Velveeta cheese, pepper jack cheese, cooked chorizo, Rotel tomatoes, diced onions, and jalapeños.
  3. Place the skillet/pan in the smoker and cook for 45–60 minutes, stirring every 15 minutes to ensure even melting.
  4. When the cheese is fully melted and creamy, stir in a splash of milk if you prefer a thinner consistency.
  5. Serve hot with tortilla chips, pretzels, or fresh veggies.
