
Seared Sesame-Crusted Salmon over Forbidden Rice & Miso-Glazed Carrots
Salmon is an excellent source of omega-3 fatty acids, which studies show can reduce inflammation and slow the progression of certain cancers including colon, breast, and prostate.
According to New Mexico State University, forbidden (black) rice is rich in anthocyanins which are potent antioxidants that contribute to cancer prevention by neutralizing harmful free radicals.
This recipe is the perfect way to pair these cancer-fighting ingredients into a delicious dinner dish.
Ingredients:
- 2 salmon fillets
- 1/4 cup black sesame seeds
- 1 cup forbidden rice
- 1 bunch carrots (peeled and halved lengthwise)
- 1 tbsp miso paste
- 1 tbsp honey or maple syrup
- 1 tbsp rice vinegar
- 1 tsp grated ginger
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp pepper

Directions
- Cook forbidden rice according to package instructions; set aside and keep warm.
- Whisk together miso paste, honey, rice vinegar, and ginger. Toss carrots in mixture.
- Roast carrots at 400°F (200°C) until tender and caramelized, about 20 minutes.
- Season salmon with salt and pepper, then press into sesame seeds to coat.
- In a hot pan with a drizzle of olive oil, sear salmon skin-side down for 4 minutes; flip and cook 2 more
