Salmon and Vegetables
- 2 salmon filets (6-8 oz each)
- 1 large sweet potato (peeled and cubed)
- 1 red bell pepper (chopped)
- 1 yellow bell pepper (chopped)
- 2 tbsp olive oil
- 2 tsp garlic powder (divided)
- 2 tsp paprika (divided)
- 1 tsp salt (divided)
- 1/2 tsp black pepper
- 1 medium red onion
Garlic Butter Sauce
- 4 tbsp unsalted butter (melted)
- 2 tbsp fresh parsely (finely chopped)
- 1 tsp garlic powder
- 1/2 tap red chili flakes
- 1/4 tsp salt
- 1/4 tsp black pepper
Directions
- Preheat oven to 200°C (400°F).
- Wash, peel and chop sweet potato into small cubes and season with oil, garlic, paprika and salt. Mix together well and place in an oven-proof dish.
- In the same bowl, add chopped peppers and onion and season with the same spices.
- Place all vegetables on a baking tray and roast for 25-30 minutes, until sweet potatoes have softened and cooked through.
- Season salmon with paprika and garlic powder and add to the oven during the last 12-15 minutes of cooking.
- While everything cooks, make the sauce by mixing butter, parsley, chilli flakes and garlic powder in a bowl.
- When everything has cooked, serve the sweet potatoes, vegetables and salmon and pour over the garlic butter sauce.
