
Keto Tuscan Stuffed Chicken Thighs
Ingredients:
- 1 handfull baby spinach
- 1/4 cup bell pepper
- 2 oz cream cheese
- 1/4 cup shredded mozzarella cheese
- 3 tbsp onion powder (divided)
- 3 tbsp garlic powder (divided)
- 2 tsp smoked paprika (divided)
- 3 tbsp olive oil (divided)
- 6-8 large shrimp
- 3/4 cup heavy whipping cream
- 1/4 cup shredded mozzarella cheese
- 6-8 sun dried tomatoes
Directions
- Sautee spinach and bell pepper.
- Add sautéed spinach and bell pepper to a bowl with cream cheese and shredded mozzarella. Mix it all together. Set aside to fill the chicken with.
- Season chicken thighs and shrimp with spices.
- Sautee shrimp then set aside.
- Stuff chicken with sautéed filling.
- Sear chicken on each side for 5-7 minutes until it has a nice crust.
- Add heavy whipping cream, shredded mozzarella, sun-dried tomatoes, and sautéed shrimp to the skillet and let simmer.
- Once it comes to a nice boil take it out and enjoy!
