Ingredients:
Honey Orange Salmon
Smokey Garlic Butter Shrimp
Coconut Rice
Directions
🍊Honey Orange Salmon
- Season fish with garlic powder, salt, blackened seasoning and lotssss of smoked paprika. As much as you like!
- On medium heat, sear salmon in a skillet evenly on both sides
- In a bowl:Combine 2 tablespoons of honey, 3 tablespoons of orange marmalade, 1 teaspoon garlic and half teaspoon red chili flakes. Mix and warm sauce in microwave
- Garnish fish with generous amount of fresh chopped dill and top with the orange sauce!
🍤Smokey garlic butter shrimp
- Season the same as the fish and toss in a bag with three tablespoons of cornstarch and shake!
- In a pan heat up canola or coconut oil (I used both) Just enough to cover half the shrimp. This isn’t a deep fry. But yea fry shrimp on both sides. Will only take a few minutes
- In a separate pan add 3 tablespoons of butter, 2 tablespoons of garlic and 1 tablespoon of smoked paprika. Once butter is melted toss in the shrimp and coat evenly
🍚 Coconut rice
- Rinse 3 cups of rice in water until water runs clear (like in video)
- In a small pot add back one cup of water and one can of coconut milk. Cover and cook on medium/low heat for 20 min
- Once coconut milk has reduced completely, toss in a tablespoon of butter, a tablespoon of chopped garlic and salt to taste. Enjoy!!
