This high-protein Bún Bò Huế is a comforting and nourishing Vietnamese noodle soup made with lean proteins, bone broth, and vibrant herbs. It’s easy to make and packed with flavor — a cozy bowl of goodness any day of the week.

- In a small pot, heat avocado oil over medium heat.
- Add shallot, garlic, lemongrass, and Bún Bò Huế (BBH) powder. Sauté until fragrant.
- Pour in bone broth, water, and fish sauce. Bring to a simmer.
- Add beef balls and cook for 2–3 minutes.
- Add thinly sliced beef and simmer for another 1–2 minutes until just cooked.
- Stir in choy sum and simmer for 1 minute.
- Rinse and warm your miracle noodles according to package instructions.
- To serve: place noodles in a bowl, ladle soup and proteins over the top, and garnish with bean sprouts and red onion.
- Finish with a squeeze of lime and enjoy hot!
