This high-protein Bún Bò Huế is a comforting and nourishing Vietnamese noodle soup made with lean proteins, bone broth, and vibrant herbs. It’s easy to make and packed with flavor — a cozy bowl of goodness any day of the week.

Directions

  1. In a small pot, heat avocado oil over medium heat.
  2. Add shallot, garlic, lemongrass, and Bún Bò Huế (BBH) powder. Sauté until fragrant.
  3. Pour in bone broth, water, and fish sauce. Bring to a simmer.
  4. Add beef balls and cook for 2–3 minutes.
  5. Add thinly sliced beef and simmer for another 1–2 minutes until just cooked.
  6. Stir in choy sum and simmer for 1 minute.
  7. Rinse and warm your miracle noodles according to package instructions.
  8. To serve: place noodles in a bowl, ladle soup and proteins over the top, and garnish with bean sprouts and red onion.
  9. Finish with a squeeze of lime and enjoy hot!
