Grilled Cheese Burrito
Crispy, cheesy, gooey, and loaded with flavor—this grilled cheese burrito takes your lunch game to a whole new level. It’s inspired by fast food, made better at home!
Ingredients:
- 1 large flour tortilla
- 0.5 cup seasoned ground beef (or meat of choice)
- 0.25 cup cooked rice (Mexican or plain)
- 0.25 cup shredded cheddar cheese
- 0.25 cup nacho cheese or queso
- 2 tablespoons sour cream
- 0.25 cup tortilla strips or crushed chips (for crunch)
- 2 tablespoons shredded mozzarella (for the grilled outside)
- Butter or oil for pan-grilling
Instructions
- Heat a skillet over medium heat and cook your ground beef until fully browned. Season as desired (taco seasoning works great!).
- Warm the tortilla for a few seconds to make it pliable.
- In the center of the tortilla, layer rice, seasoned beef, nacho cheese, sour cream, tortilla strips, and shredded cheddar.
- Fold the tortilla tightly into a burrito, tucking in the sides.
- Sprinkle shredded mozzarella on one side of the burrito.
- Grease a skillet with butter or oil. Place the mozzarella side down and grill until golden and crispy. Flip and toast the other side.
- Slice in half and serve hot. Optional: dip in more queso or sour cream!
