Easy Kid-Friendly Crockpot Chicken Dinner

A simple, all-in-one crockpot meal that’s both creamy and comforting. Tender chicken and orzo pasta cook together in a flavorful, creamy sauce with spinach and sun-dried tomatoes—minimal prep and maximum flavor for a busy family night.
Ingredients:
- 1.5-2 lbs diced chicken breast
- 1 tsp salt (to taste)
- 1 tsp black pepper (to taste)
- 1 tsp crushed red pepper flakes (to taste)
- 1/4 cup sun dried tomatoes
- 1 tbsp minced garlic
- 1/2 cup white onion (chopped)
- 1.5-2 cups chicken broth
- 1 cup heavy cream
- 1 cup orzo pasta
- 3 handfuls fresh spinach
- 1 cup parmesan cheese (grated)

Directions
- Place diced chicken breast into the crockpot.
- Season the chicken generously with salt, pepper, Italian seasoning, and crushed red pepper flakes.
- Add sun-dried tomatoes, minced garlic, white onions, and chicken broth to the crockpot. Stir to combine.
- Cover and cook on LOW heat for 2 to 3 hours, until the chicken is cooked through and tender.
- After the first cook time, stir in 1 cup of heavy cream and 1 cup of orzo pasta.
- Cover and continue to cook on LOW for another 30 minutes, or until the orzo is tender.
- Turn off the crockpot. Stir in fresh spinach and parmesan cheese until the spinach is wilted and the cheese is melted into the sauce.
- Serve immediately, garnished with extra parmesan if desired.
