These cheesy, saucy enchiladas are everything you crave on a weeknight — hearty, comforting, and crazy easy to make. Just roll, bake, and dig in!
Ingredients
- 1 lb ground beef or shredded chicken
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (4 oz) diced green chiles
- 1 packet taco seasoning or homemade
- 2 cups enchilada sauce (canned or homemade)
- 8 small flour or corn tortillas
- 2 cups shredded Mexican blend cheese
- Optional: sour cream, chopped cilantro, jalapeños

Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add onion and garlic, sautéing until softened (about 3 minutes).
- Add ground beef and cook until browned. Stir in green chiles and taco seasoning. Cook another 2 minutes, then remove from heat.
- Spread ½ cup of enchilada sauce over the bottom of a 9×13-inch baking dish.
- Warm tortillas slightly, then fill each with a scoop of the beef mixture and a sprinkle of cheese. Roll tightly and place seam-side down in the dish.
- Pour remaining enchilada sauce evenly over the rolled tortillas and top with the rest of the cheese.
- Bake uncovered for 20–25 minutes, or until hot and bubbly.
- Top with sour cream, fresh cilantro, or jalapeños if desired. Serve hot!
