These cheesy, saucy enchiladas are everything you crave on a weeknight — hearty, comforting, and crazy easy to make. Just roll, bake, and dig in!

Ingredients

  • 1 lb ground beef or shredded chicken
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (4 oz) diced green chiles
  • 1 packet taco seasoning or homemade
  • 2 cups enchilada sauce (canned or homemade)
  • 8 small flour or corn tortillas
  • 2 cups shredded Mexican blend cheese
  • Optional: sour cream, chopped cilantro, jalapeños

Beef Enchiladas

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic, sautéing until softened (about 3 minutes).
  3. Add ground beef and cook until browned. Stir in green chiles and taco seasoning. Cook another 2 minutes, then remove from heat.
  4. Spread ½ cup of enchilada sauce over the bottom of a 9×13-inch baking dish.
  5. Warm tortillas slightly, then fill each with a scoop of the beef mixture and a sprinkle of cheese. Roll tightly and place seam-side down in the dish.
  6. Pour remaining enchilada sauce evenly over the rolled tortillas and top with the rest of the cheese.
  7. Bake uncovered for 20–25 minutes, or until hot and bubbly.
  8. Top with sour cream, fresh cilantro, or jalapeños if desired. Serve hot!
