
Crispy Air-Fried Potato Skins
Who needs a pizza or loaded nachos when you can have these indulgent air-fried potato skins? Crispy potato shells stuffed with gooey cheddar cheese, crispy pepperoni, and a dollop of cool sour cream are the ultimate snack for parties, game days, or any time you’re craving something irresistibly cheesy and delicious.
Ingredients
- 4 medium russet potatoes
- 2 tablespoons olive oil
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 cup shredded cheddar cheese
- 16–20 mini pepperoni slices
- ½ cup sour cream
- 2 tablespoons chopped green onions (for garnish)
Instructions
- Prepare the Potatoes:
- Scrub the potatoes clean and pierce them several times with a fork.
- Microwave for 8–10 minutes, flipping halfway, until softened but not fully cooked. Let them cool until easy to handle.
- Scoop Out the Potatoes:
- Slice each potato in half lengthwise and scoop out most of the flesh, leaving a sturdy shell with about ¼-inch of potato.
- Reserve the scooped potato for another recipe, like mashed potatoes.
- Season the Skins:
- Preheat your air fryer to 400°F (200°C).
- Brush the potato skins inside and out with olive oil. Sprinkle evenly with garlic powder, smoked paprika, salt, and black pepper.
- Air-Fry the Potato Skins:
- Place the potato skins cut-side down in the air fryer basket.
- Air fry for 8 minutes, flip them over, and cook for another 5 minutes until crispy and golden.
- Add the Toppings:
- Remove the potato skins from the air fryer and fill each one with shredded cheddar cheese, evenly distributing it.
- Top with 2–3 mini pepperoni slices per skin.
- Melt the Cheese:
- Return the loaded potato skins to the air fryer, cut-side up.
- Cook at 375°F (190°C) for 3–5 minutes, or until the cheese is melted and bubbly.
- Garnish and Serve:
- Transfer the potato skins to a serving platter.
- Add a dollop of sour cream to each skin and sprinkle with chopped green onions.
- Serve immediately while hot and gooey.
Tips for Success
- For extra crispiness, brush the skins with more olive oil before air frying.
- Want a spicy kick? Use spicy pepperoni or sprinkle with red pepper flakes before serving.
