🛒 Ingredients
👩🍳 Instructions
- In a large pot, cook bacon over medium heat until crispy. Remove and set aside, leaving a bit of fat in the pan.
- Sauté onion in the bacon fat for 3–4 minutes until soft. Add garlic and cook 1 minute more.
- Sprinkle in flour and stir constantly to form a light roux (about 1 minute).
- Slowly whisk in the reserved clam juice and bottled clam juice. Bring to a simmer.
- Add diced potatoes and simmer for 10–12 minutes until tender.
- Lower heat and stir in milk and cream. Add clams and heat through (do not boil).
- Season with salt and pepper to taste. Serve hot, topped with crispy bacon and fresh herbs.
💡 Chowder Tips
- Don’t boil once the cream is added — it can curdle or separate.
- If you like it thicker, mash a few potatoes against the side of the pot before serving.
- Want to level up? Add a splash of white wine when cooking the onions.
- Great for make-ahead — chowder tastes even better the next day!
