Cajun Spaghetti

A flavorful, spicy Cajun spaghetti recipe that’s quick to make and packed with bold Southern-inspired flavors — perfect for a cozy dinner that excites your taste buds!
Ingredients:
- 8 oz spaghetti
- 1 lb andouille sausage, sliced
- 1 lb chicken breast, cut into bite-size pieces
- 1 tbsp olive oil
- 1 bell pepper, diced (red or green)
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 can diced tomatoes
- 1 cup chicken broth
- 2 tsp Cajun seasoning (adjust to taste)
- 0.5 tsp smoked paprika
- Salt and pepper, to taste
Instructions
- Cook spaghetti according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium-high heat. Add sliced andouille sausage and cook until browned, about 5 minutes. Remove and set aside.
- In the same skillet, add chicken pieces and cook until no longer pink, about 6-8 minutes. Remove and set aside with sausage.
- Add diced onion and bell pepper to the skillet. Sauté until softened, about 4 minutes.
- Add minced garlic and cook for another 1 minute until fragrant.
- Pour in diced tomatoes (with juice) and chicken broth. Stir in Cajun seasoning, smoked paprika, salt, and pepper. Bring to a simmer.
- Return sausage and chicken to the skillet. Stir to combine and simmer for 5 minutes to meld flavors.
- Add cooked spaghetti to the skillet and toss until well coated with sauce.
- Garnish with chopped fresh parsley and serve immediately.
