Directions
- In a saucepan, whisk together the MILK, SUGAR, EGG YOLKS, FLOUR, vanilla extract, and the seeds and pods from the vanilla beans.
- Cook over medium heat, whisking constantly until the mixture thickens into a smooth pastry cream.
- Transfer the pastry cream to a shallow dish, cover directly with plastic wrap or foil, and refrigerate for at least 5 HOURS.
- Beat the MASCARPONE with the sweetened condensed milk for about 10 seconds.
- Add the HEAVY CREAM and Sanapart, then whip until thick and creamy.
- Beat the chilled pastry cream until smooth, then gently fold it into the mascarpone mixture.
- Heat the FROZEN BLUEBERRIES with the brown sugar until softened.
- Blend until smooth, then fold in the chopped FRESH BLUEBERRIES and lemon juice.
- Pour the blueberry mixture into small silicone molds and freeze for at least 3 HOURS.
- Fill larger blueberry-shaped silicone molds halfway with the vanilla cream.
- Add one frozen blueberry insert to the center of each mold.
- Cover with more vanilla cream and smooth the tops.
- Freeze for another 4–5 HOURS until completely firm.
- Melt the WHITE COUVERTURE with the COCOA BUTTER, stirring every 30 seconds until smooth.
- Color the glaze with navy and black fat-soluble food coloring and cool to 38°C (100°F).
- Insert skewers into the frozen cakes and dip each one twice into the glaze.
- Carefully remove the skewers and smooth the small holes with a knife if needed.
- Refrigerate for about 2 HOURS before serving so the center becomes creamy and silky.
