Directions

Chicken

  1. Butterfly chicken by cutting in half width-wise all the way through to create 4 thin pieces of chicken.
  2. Season both sides with salt and black pepper.
  3. Place flour in a shallow bowl. Add a large pinch of salt and a few grinds of black pepper.
  4. In another shallow bowl, beat eggs to blend.
  5. In a third shallow bowl, combine panko bread crumbs, parmesan, oregano, red pepper flakes, and garlic powder.
  6. Working one piece of chicken at a time, coat the chicken in flour, shaking off any excess.
  7. Dip chicken into eggs, letting excess drip off.
  8. Finally dip the chicken into the panko mixture, gently pressing to adhere and ensuring both sides of the chicken are well coated.
  9. Working in batches (as necessary), in an air fryer basket, arrange chicken in a single layer. Cook at 400°, turning once, until just cooked through. (About 5 minutes per side.)
  10. Top chicken with marinara and mozzarella then continue to cook at 400° until cheese is melted and golden.  (About 3 minutes more.)

Marinara

  1. Heat oil in a medium pot over medium heat.
  2. Add onion and garlic. Stir to combine. Reduce heat to low. Cover and cook, stirring occasionally. (About 10 minutes.)
  3. Uncover and cook, stirring occasionally until onion is translucent, softened, and fragrant. (About 5 minutes more.)
  4. Stir in tomatoes and basil. Bring to a boil then reduce heat to medium-low and simmer, stirring occasionally until slightly thickened.  (About 30 minutes.)
  5. Season with salt and pepper. Discard basil.
