The Holiday Centerpieces

5. Smothered Baked Chicken

Browned chicken, peppers and onions settle into a rich gravy for a comforting centerpiece. Pair it with the dressing and mac and cheese for the cozy side of Whitney’s spread.

Ingredients

Chicken & Gravy

Directions

  1. Season the chicken with poultry seasoning, all-purpose seasoning, dried thyme, rosemary, smoked paprika, salt and pepper. Account for salt already present in the blends.
  2. Heat avocado oil in a large oven-safe pan over medium-high heat. Sear the chicken until browned outside; it does not need to be cooked through yet. Transfer to a plate and drain excess fat, leaving enough to cook the vegetables.
  3. Sauté the bell pepper and onion until beginning to soften. Add the garlic and cook for about 1 minute.
  4. Stir in the cream of chicken soup and broth. Adjust the all-purpose seasoning and smoked paprika, and bring to a gentle boil.
  5. Return the chicken to the gravy. The published source specifies baking covered at 475°F for 1 hour, then uncovered for 30 minutes. This temperature and timing require confirmation before publication. Use an oven-safe pan and lid, and ensure the chicken reaches at least 165°F internally.
  6. Spoon gravy over the chicken and finish with parsley. Serve warm.

6. Herb Crusted Lamb Chops

A seared rack of lamb with a Parmesan and herb crust gives this table a second, more celebratory centerpiece. Slice it into individual chops after resting so each portion carries some of that fragrant crust.

Ingredients

Lamb

Herb Crust

Directions

  1. Heat the oven to 400°F. Season the rack with salt and pepper.
  2. Heat avocado oil in an oven-safe skillet and sear the rack on both sides. Add butter, crushed garlic, rosemary and thyme; baste for 2–3 minutes.
  3. Roast the rack for 10 minutes.
  4. Pulse the panko, Parmigiano Reggiano, herb leaves, garlic powder, onion powder, salt and pepper into coarse crumbs. The source also adds mustard and olive oil here; their allocation and quantity require confirmation.
  5. Brush the rack with stone-ground mustard and press the herb crumbs onto its top. Return to the oven for about 15 minutes. The source targets 155°F internally; use a thermometer rather than time alone.
  6. Rest for 10 minutes, then slice between the bones into individual chops.

7. Seafood Pot Pie with Cheddar Biscuit Topping

Shrimp, langostino and lump crab make this pot pie a little extra special, while Cheddar Bay biscuits keep it firmly in comfort-food territory. Whitney’s individual ramekins make a memorable addition to the holiday spread.

Ingredients

Seafood Filling

Biscuit Topping

Directions

  1. Heat the oven to 400°F. Melt butter with olive oil in a large skillet over medium heat.
  2. Cook the onion, bell peppers and celery for about 5 minutes, until softened. Add garlic and cook for 30 seconds; season with salt and pepper.
  3. Stir in the flour and cook for 1 minute. Gradually stir in stock until the base thickens, then add cream, Old Bay and smoked paprika.
  4. Add shrimp, langostino and crab. Simmer gently for 3–5 minutes, until the shrimp turn pink. Stir in lemon juice and parsley, and adjust seasoning. Fold already-cooked seafood in near the end to avoid overcooking.
  5. Divide the filling among oven-safe ramekins, leaving room for the topping. Set the ramekins on a baking sheet.
  6. Prepare the biscuit dough according to its package and drop spoonfuls over each ramekin.
  7. Bake for 18–22 minutes, until the biscuits are golden and the filling bubbles. Prepare the package’s garlic butter and brush it over the hot biscuits.

8. Cheese Gal’s Skillet Chicken Pot Pie

Whitney’s take on Cheese Gal’s skillet pot pie brings chicken, leeks and herbs under a patchwork of golden puff pastry. It belongs alongside the seafood version as another cozy centerpiece guests can choose from.

Whitney’s version of a recipe credited to Cheese Gal (@Cheesegal).

Ingredients

Directions

  1. Heat the oven to 400°F. On a floured surface, roll the puff pastry to approximately 10 × 14 inches, cut into about 24 squares and refrigerate.
  2. Season the chicken with salt and pepper. Brown it in batches in a large oven-safe skillet using the listed butter, divided between batches. Transfer cooked chicken to a plate.
  3. Cook the leeks, carrots and celery in the skillet for 5–6 minutes. Season, add the flour and stir for another minute.
  4. Pour in the wine and cook for about 45 seconds. Stir in broth and cream cheese until creamy, about 4 minutes.

  6. Beat the egg with the water. Arrange the pastry squares over the filling with slight overlaps and brush with egg wash.

9. Cornbread Dressing

This is the anchor of the holiday sides: day-old cornbread and herb-seasoned stuffing, moistened with a homemade turkey-wing broth. Shredded turkey and the cooked vegetables go back into the dressing for a deeply savory finish.

Ingredients

Turkey Broth

Dressing

Directions

  1. Combine turkey wings, water, celery, onion, bell peppers and chicken base in a large pot. Bring to a boil, then simmer for 1½–2 hours, until the meat is tender.
  2. Remove the wings and strain the broth, reserving the cooked vegetables. Shred the turkey meat and discard the bones.
  3. Heat the oven to 350°F (177°C). Grease a 9 × 13-inch baking dish.
  4. Combine the crumbled cornbread, herb-seasoned stuffing and 1 cup reserved vegetables. Mix in all three soups and 1 cup shredded turkey. Add sage if using.
  5. Gradually stir in 4–5 cups broth, stopping when the mixture is moist but not soupy.
  6. Spread in the dish and bake for 40–50 minutes, until golden and set. Rest for 10 minutes before serving.

10. 4 Cheese Mac and Cheese

Colby Jack, Gruyère, Fontina and smoked Gouda give Whitney’s baked mac its rich, layered flavor. A creamy center and golden top make it the side everyone wants next to the dressing.

Ingredients

Mac and Cheese

Directions

  1. Heat the oven to 400°F and butter a baking dish. Combine the salt, garlic powder, onion powder, black pepper, both paprikas and cayenne.
  2. Boil the pasta in well-salted water for 6 minutes. Reserve 1 cup cooking water, then drain.
  3. Melt the butter in a large pot. Whisk in flour and cook for 1 minute.
  4. Gradually whisk in the listed half-and-half. Simmer for about 5 minutes, until thickened, then add the seasoning mixture.
  5. Reserve some of the listed cheeses for layering. Remove the sauce from heat and stir in the remaining Colby Jack, Gruyère, Fontina and smoked Gouda until melted.
  6. Fold in the pasta, loosening with a little reserved pasta water only if needed. Layer the pasta and reserved cheese in the baking dish.
  7. Bake for 20–35 minutes, until bubbling and golden. Broil for up to 2 minutes if desired, watching closely. Rest for 10 minutes before serving.

A Sweet Finish

12. Strawberry Pie

Whitney calls this Momma’s Strawberry Pie, and its place here is personal: fresh strawberries, glossy glaze and a Cool Whip topping in a flaky crust. It is the family-tradition finish to this holiday collection.

Momma’s Strawberry Pie

Directions

  1. Bake the pie crust according to its package instructions and let it cool completely.
  2. Wash, hull and slice the strawberries, then combine them with the strawberry glaze.

13. Japanese Sweet Potato Crème Brûlée

End with the unexpected: tender Japanese sweet potatoes filled with miso custard and finished with a crackly caramelized sugar shell. This is the dessert that makes the spread feel unmistakably like Whitney’s collection.

Ingredients

Sweet Potatoes & Custard

Caramelized Topping

Directions

  1. Heat the oven to 425°F. Place the sweet potatoes on a parchment-lined baking sheet and roast for 1–2 hours, until completely tender; larger potatoes take longer.
  2. Remove the potatoes and lower the oven to 325°F.
  3. Warm the cream in a saucepan until hot but not boiling. Whisk the ¼ cup sugar, egg yolks and miso in a bowl until smooth.
  4. Slowly whisk the hot cream into the yolk mixture a little at a time to temper the eggs. Return the mixture to the saucepan and whisk smooth.
  5. Cut an opening in the top of each potato and scoop out enough flesh to form a custard well, keeping the sides and bottom intact.
  6. Fill the wells with custard. Bake at 325°F for about 30 minutes, until the edges set and the centers still wobble slightly.
  7. Refrigerate for about 30 minutes, or until chilled.
  8. Sprinkle approximately 1 tsp sugar over each custard. Caramelize with a kitchen torch and let the shell harden for a minute or two before serving.

Plan Your Spread

Bake and cool the strawberry pie crust ahead, then assemble the pie with enough time for its refrigerator rest. Make the dressing broth before you need to mix the dressing. The sweet potatoes need the longest roast, so leave room in the schedule for their custard bake and chilling.

The oven temperatures vary across this collection. Group dishes by temperature and avoid assuming they can all bake together. Assemble the cheese board close to serving, put the warm starters out when guests are ready to eat, and save the brûlée torching for the final dessert finish.

Make room for a little familiar, a little unexpected, and plenty to share.
