Packed with colorful peppers, ripe tomatoes, crunchy cucumbers, and leafy greens, it’s a nourishing meal that’s quick to assemble and ideal for lunch, picnics, or a light dinner.

- Toast the bread: Preheat a skillet or toaster. Lightly butter each side of 2 slices of your favorite bread (sourdough, whole wheat, or multigrain work great). Toast in the skillet over medium heat until golden brown and crisp on both sides, about 2-3 minutes per side. Alternatively, use a toaster or grill pan.
- Prepare the veggies: Wash and thinly slice cucumber, tomato, red onion, and bell pepper. Wash leafy greens like spinach or arugula and pat dry.
- Assemble the sandwich: Spread your choice of hummus, avocado, or a tangy vinaigrette on one or both toasted bread slices. Layer the veggies evenly — cucumber slices, tomato, bell pepper, red onion, and greens.
- Add seasoning: Sprinkle with salt, freshly cracked black pepper, and if desired, a pinch of dried oregano or chili flakes for a bit of zing.
- Optional extras: Add sliced olives, sprouts, or a slice of your favorite cheese or vegan cheese for extra flavor.
- Close and serve: Place the second slice of toasted bread on top, press gently, and slice the sandwich diagonally. Serve immediately with your favorite side like fresh fruit or veggie chips.
