This one-pan Amba Chicken and Rice dish is flavorful, comforting, and super easy to prepare. With bold spices, tender chicken, and fragrant rice, it’s a hearty meal the whole family will love. The Amba sauce adds a tangy twist that takes it over the top.

Ingredients:

Directions

  1. Preheat the oven to 420°F (220°C).
  2. In a 14-inch round oven-safe pan, drizzle with olive oil and sprinkle with flaky salt.
  3. Add the washed and drained rice, shredded carrots, and green onions. Spread evenly.
  4. Place the chicken thighs on top of the rice mixture.
  5. Spoon the Amba sauce over the chicken and spread it to coat thoroughly.
  6. Gently pour in 4 cups boiling water.
  7. Cover with wet parchment paper followed by aluminum foil.
  8. Bake at 420°F for 55 minutes.
  9. Remove cover and switch oven to convection broil at 450°F for 5–7 minutes or until golden brown.
  10. Garnish with chopped green onion and serve hot. Enjoy!
