This one-pan Amba Chicken and Rice dish is flavorful, comforting, and super easy to prepare. With bold spices, tender chicken, and fragrant rice, it’s a hearty meal the whole family will love. The Amba sauce adds a tangy twist that takes it over the top.

Directions
- Preheat the oven to 420°F (220°C).
- In a 14-inch round oven-safe pan, drizzle with olive oil and sprinkle with flaky salt.
- Add the washed and drained rice, shredded carrots, and green onions. Spread evenly.
- Place the chicken thighs on top of the rice mixture.
- Spoon the Amba sauce over the chicken and spread it to coat thoroughly.
- Gently pour in 4 cups boiling water.
- Cover with wet parchment paper followed by aluminum foil.
- Bake at 420°F for 55 minutes.
- Remove cover and switch oven to convection broil at 450°F for 5–7 minutes or until golden brown.
- Garnish with chopped green onion and serve hot. Enjoy!
