Ingredients:
- 1 tbsp avocado oil (or olive oil)
- 1 1/2 - 2 lbs ribeye steak (cut into bite-sized pieces, or sirloin steak, tenderloin, or New York strip)
- 1/2 tsp salt (to taste)
- 1/2 tsp pepper (to taste)
- 5 tbsp butter
- 4 cloves garlic (minced)
- 2 tbsp fresh parsley (chopped)
Ingredients are subject to availability at local stores. Unavailable items will be automatically substituted at best-effort.
Directions
- Prep the steak: Cut steak into cubes and season them generously with salt and pepper.
- Sear the steak: Add the avocado oil to a cast iron or large skillet and heat it over high heat. Make sure the oil is hot, then add the steak bites to it. Cook for at least 3 minutes before stirring to get a nice sear. Continue cooking for another 2 minutes until they’re golden brown. If your skillet isn’t big enough, you may need to do this in batches.
- Melt the butter: Transfer the steak bites to a bowl and in the same skillet, add the butter. Turn the heat down to medium-low and allow the butter to melt.
- Add the garlic: Add the minced garlic. Cook for about 30 seconds while stirring, just until the garlic becomes fragrant and starts to brown.
- Coat and rest: Add the steak bites back to the skillet and toss well to coat. Allow steak to rest for a few minutes.
- Serve: Garnish with parsley and serve.
Pro Tips
- Get the pan screaming hot: High heat is the key to a deep, golden crust on the steak bites.
- Don’t move the steak: Let it sit undisturbed for the first 3 minutes so a proper sear can form.
- Don’t crowd the pan: Cook in batches if needed—overcrowding steams the meat instead of searing it.
- Watch the garlic: It goes from fragrant to burnt in seconds—30 seconds is all it needs.
- Use a cast-iron skillet: It retains heat beautifully and gives the steak bites a restaurant-quality crust.
- Rest before serving: A few minutes off the heat lets the juices redistribute for maximum tenderness.
