- 1 cup frozen corn (diced)
- 1 small onion
- 1 cup salsa
- 1 tbsp taco seasoning
- 1 cup shredded cheddar cheese

- green onions
- cilantro

Step 1: Preheat
Preheat oven to:
375°F
Lightly spray or grease a 9×13 casserole dish.
Step 2: Make the taco filling
Heat a skillet over medium heat.
Add:
- onion
Cook 3–4 minutes until softened.
Add:
- black beans
- corn
- salsa
- taco seasoning
Stir together.
Cook another 2–3 minutes.
Remove from heat.
Step 3: Add to casserole dish
Spread filling evenly across the bottom.
Sprinkle:
- shredded cheese
across the top.
Step 4: Make cornbread batter
Prepare cornbread according to box directions.
Pour batter evenly over the taco mixture.
Do not stir.
The cornbread will bake over the filling.
Step 5: Bake
Bake:
20–25 minutes
until top becomes golden brown.
Insert a toothpick into the cornbread portion:
If it comes out clean, it’s done.
Step 6: Finish and serve
