White Chocolate Cheesecake Strawberries
Ingredients:
- 8 oz Cream Cheese
- 1/2 cup confectioners sugar
- 1/2 tsp vanilla extract
- 1 pint strawberries (hulled and cored)
- 3 graham crackers
- White Chocolate Chips
Ingredients are subject to availability at local stores. Unavailable items will be automatically substituted at best-effort.
Directions
1. Make the Cheesecake Filling
In a mixing bowl, beat the cream cheese, confectioners sugar, and vanilla extract until smooth and creamy. Set aside.
2. Prepare the Strawberries
Wash and dry the strawberries thoroughly. Using a small knife or a corer, remove the center of each strawberry to create space for the filling.
3. Fill the Strawberries
Transfer the cheesecake mixture into a piping bag (or use a ziplock bag with the corner snipped off). Pipe the filling into each strawberry until full.
4. Crush the Graham Crackers
Place the graham crackers in a plastic bag and crush them into fine crumbs using a rolling pin.
5. Melt the White Chocolate
In a microwave-safe bowl, melt the white chocolate chips in 15-second intervals, stirring in between, until smooth.
6. Dip the Strawberries
Line a tray with wax paper (trust me, they will stick to any other surface!). Dip each filled strawberry halfway into the melted white chocolate, then immediately roll the bottom in the crushed graham crackers for that cheesecake crust effect.
7. Chill and Serve
Place the dipped strawberries on the wax paper and refrigerate for at least 15 minutes to allow the chocolate to set.
8. Enjoy!
These cheesecake-stuffed white chocolate strawberries are the perfect bite-sized Valentine’s Treat.
