
Whipped Honey Ricotta Roasted Carrots
These roasted carrots are beautifully caramelized and finished with a cloud of whipped ricotta and a sweet drizzle of honey. Simple, nourishing, and stunning on any table — this recipe brings together earthy, creamy, and golden flavors in every bite.

- 1 tbsp olive oil
- Salt + pepper, to taste
- 1 cup ricotta cheese
- 1 tbsp honey, plus extra for drizzling
- Zest of 1 lemon
🍯 Instructions
- Preheat oven to 425°F (220°C).
- Toss carrots with olive oil, salt, and pepper. Roast for 20–25 minutes or until tender and lightly caramelized.
- While carrots roast, blend ricotta, honey, and lemon zest in a food processor until light and creamy (about 1–2 minutes).
- Spread whipped ricotta on a serving plate. Top with roasted carrots.
- Drizzle with additional honey and garnish with herbs, chili flakes, or pistachios if desired.
- Serve warm or room temp as a show-stopping side or starter!
