These Vegan Lemon Pepper Wings transform jackfruit and vital wheat gluten into crispy, plant-based wings coated in a buttery lemon pepper sauce. The homemade wings are shaped, chilled, battered, fried until golden and crisp, then tossed in a bright, savory lemon sauce with optional heat and sweetness.
Ingredients:
- 2 cans jackfruit
- 1/4 - 1 cup vital wheat gluten
- 2 tbsp psyllium husk (or flaxseed meal)
- 1 tbsp nutritional yeast
- 1 tbsp vegan chicken bouillon powder
- 1 tsp garlic powder
- 1 tbsp oil
- 1 tsp vegan Worcestershire sauce
- salt (to taste)
For the Sauce
- plant butter
- lemon juice
- lemon (zest)
- lemon pepper seasoning
- hot sauce (optional)
- sweetener (optional)

Directions
- Rinse the JACKFRUIT thoroughly, then squeeze out as much excess liquid as possible.
- Place the drained jackfruit in a food processor. Add the PSYLLIUM HUSK OR FLAXSEED MEAL, NUTRITIONAL YEAST, VEGAN CHICKEN BOUILLON POWDER, GARLIC POWDER, OIL, VEGAN WORCESTERSHIRE SAUCE, and SALT.
- Blend until the mixture reaches your desired consistency.
- Gradually add the VITAL WHEAT GLUTEN, starting with a small amount and adding more as needed until the mixture holds its shape.
- Mold the mixture into individual wing-shaped pieces.
- Place the shaped vegan wings in the freezer for approximately 20–30 MINUTES to firm.
- Prepare your preferred WET AND DRY BATTERS. Cherry refers viewers to her page for her batter recipe.
- Heat the frying oil to 375°F. Coat each chilled wing in the wet and dry batter, then carefully fry until the exterior is golden and crispy.
- To make the sauce, combine the PLANT-BASED BUTTER, LEMON JUICE, LEMON ZEST, and LEMON PEPPER SEASONING. Add HOT SAUCE and/or your preferred SWEETENER, if desired.
- Toss the freshly fried vegan wings in the lemon pepper sauce until evenly coated.
- Serve immediately while hot and crispy.
