Spinach & Artichoke Grilled Cheese

  1. Make the filling:

    • In a skillet over medium heat, add a drizzle of olive oil and sauté garlic until fragrant (about 30 seconds).

    • Add spinach and cook until wilted. Stir in chopped artichokes, salt, and pepper.

    • In a bowl, mix cream cheese, mayo, parmesan, mozzarella, and cheddar until smooth. Fold in the spinach-artichoke mixture. Taste and adjust seasoning.

  2. Assemble the sandwich:

    • Butter one side of each bread slice. I used mayo, but do you!!

    • On the unbuttered side, spoon a generous layer of the spinach artichoke mixture, spreading evenly.

    • Top with the second slice of bread (buttered side out).

  3. Grill:

    • Heat a skillet or griddle over medium heat. Grill each sandwich for 3–4 minutes per side until golden brown and the cheese inside is melted.

    • Press lightly with a spatula to get that classic Grilled Cheeserie crisp.

  4. Serve:

    • Slice diagonally and serve hot. A little side of tomato soup or pickles would be so on brand for the Grilled Cheeserie experience.
