Spinach & Artichoke Grilled Cheese
Ingredients:
Ingredients for 2 sandwiches
- 4 slices sourdough bread
- 1 1/2 tbsp butter (softened, for spreading)
- 1 cup baby spinach (add more if you like more greens)
- 1/2 cup canned artichoke hearts (drained and chopped)
- 2 oz cream cheese (softened)
- 2 tbsp mayo
- 1/4 cup grated parmesan cheese
- 1/2 cup mozzarella cheese
- 1/2 cup shredded white cheddar cheese (or Provolone for extra melt) (I used both)
- 1 garlic clove (minced)
- salt and black pepper, to taste
- Optional: a pinch of red pepper flakes or squeeze of lemon juice for brightness

Make the filling:

In a skillet over medium heat, add a drizzle of olive oil and sauté garlic until fragrant (about 30 seconds).

Add spinach and cook until wilted. Stir in chopped artichokes, salt, and pepper.

In a bowl, mix cream cheese, mayo, parmesan, mozzarella, and cheddar until smooth. Fold in the spinach-artichoke mixture. Taste and adjust seasoning.

Assemble the sandwich:

Butter one side of each bread slice. I used mayo, but do you!!

On the unbuttered side, spoon a generous layer of the spinach artichoke mixture, spreading evenly.

Top with the second slice of bread (buttered side out).

Grill:

Heat a skillet or griddle over medium heat. Grill each sandwich for 3–4 minutes per side until golden brown and the cheese inside is melted.

Press lightly with a spatula to get that classic Grilled Cheeserie crisp.

Serve:
-
Slice diagonally and serve hot. A little side of tomato soup or pickles would be so on brand for the Grilled Cheeserie experience.
