Name: Spinach & Artichoke Grilled Cheese
Ingredients: 4 slices sourdough bread; 1 1/2 tbsp butter (softened, for spreading); 1 cup baby spinach (add more if you like more greens); 1/2 cup canned artichoke hearts (drained and chopped); 2 oz cream cheese (softened); 2 tbsp mayo; 1/4 cup grated parmesan cheese; 1/2 cup mozzarella cheese; 1/2 cup shredded white cheddar cheese (or Provolone for extra melt) (I used both); 1 garlic clove (minced); salt and black pepper, to taste; Optional: a pinch of red pepper flakes or squeeze of lemon juice for brightness
