Spicy Calabrian Chili Pasta
Ingredients:
- 8 OZ Spaghetti
- 3-4 TBSP EVOO
- 2-3 Garlic Cloves
- 1-2 TSP Calabrian chili paste (adjust to your heat preference)
- Salt, to taste
- Fresh Ground Black Pepper
- 1/4 Cup Pasta Water
- grated Parmesan, lemon zest, fresh parsley for garnish
Instructions:
1. Cook the pasta in salted water until al dente. Reserve 1/4 cup of the pasta water, then drain.
2. Sauté the garlic in the olive oil over medium-low heat until fragrant and lightly golden (don’t burn it!).
3. Add the Calabrian chili paste and stir it into the oil and garlic for about 30 seconds.
4. Toss in the pasta, adding a bit of reserved pasta water to help the sauce cling. Stir well until coated and glossy.
5. Season with salt and pepper to taste.
6. Plate and finish with a drizzle of olive oil, a sprinkle of Parmesan (if using), lemon zest, and chopped parsley for brightness.
