Soft Burger Buns Ingredients * 325g flour (about 2½ cups) * 195g lukewarm water (about ¾ cup + 1 tbsp) * 1 tsp yeast * 1 tsp salt * 2 tsp butter Instructions 1. In a bowl, mix water with yeast, then add flour and mix. 2. Add butter and salt, then coil fold multiple times until the butter is in. Cover for 2 hours or until double in size. 3. Divide into 4 pieces. Oil your surface and turn each dough piece to make a ball. 4. Transfer to an oven tray lined with baking paper, cover with oiled plastic, and leave for 15 min. 5. Directions

  1. In a large mixing bowl, combine the LUKEWARM WATER and YEAST. Stir until the yeast begins to dissolve.
  2. Add the FLOUR and mix until a shaggy dough forms.
  3. Add the BUTTER and SALT.
  4. Use the coil-fold technique several times until the butter is fully incorporated and the dough becomes smooth and elastic.
  5. Cover the bowl and allow the dough to rise for about 2 HOURS, or until doubled in size.
  6. Divide the dough into 4 EQUAL PORTIONS.
  7. Lightly oil your work surface and gently shape each portion into a smooth ball.
  8. Transfer the dough balls to a parchment-lined baking tray, leaving space between each bun.
  9. Cover loosely with lightly oiled plastic wrap and let rest for 15 MINUTES.
  10. Whisk together the EGG YOLK and MILK, then brush over each bun.
  11. Sprinkle generously with SESAME SEEDS.
  12. Bake at 255°F for about 25 MINUTES, or until beautifully golden brown.
  13. Cool slightly before slicing and serving.
