Ingredients:
- 325 g flour
- 195 g water (lukewarm)
- 1 tsp yeast
- 1 tsp salt
- 2 tsp butter

Directions
- In a large mixing bowl, combine the LUKEWARM WATER and YEAST. Stir until the yeast begins to dissolve.
- Add the FLOUR and mix until a shaggy dough forms.
- Add the BUTTER and SALT.
- Use the coil-fold technique several times until the butter is fully incorporated and the dough becomes smooth and elastic.
- Cover the bowl and allow the dough to rise for about 2 HOURS, or until doubled in size.
- Divide the dough into 4 EQUAL PORTIONS.
- Lightly oil your work surface and gently shape each portion into a smooth ball.
- Transfer the dough balls to a parchment-lined baking tray, leaving space between each bun.
- Cover loosely with lightly oiled plastic wrap and let rest for 15 MINUTES.
- Whisk together the EGG YOLK and MILK, then brush over each bun.
- Sprinkle generously with SESAME SEEDS.
- Bake at 255°F for about 25 MINUTES, or until beautifully golden brown.
- Cool slightly before slicing and serving.
