Smothered Green Beans & Potatoes

A hearty and flavorful Southern classic! These Smothered Green Beans & Potatoes are cooked low and slow with bacon and Cajun seasonings until they’re fall-apart tender. Perfect as a side or served over rice.
Ingredients:
- 1 1/2 lbs fresh green breans (trimmed and halved)
- 12 oz bacon (chopped (or 6 oz if adding sausage))
- 1 small onion (diced)
- 1-2 tsp minced garlic
- 2 tbsp all purpose flour
- 2-3 cups chicken stock (enough to almost cover beans)
- 1 1/2 lbs baby potatoes (or regular potatoes, cut up)
- 1/2 tbsp Britscookin Cajun
- 1/2 tsp Britscookin Garlic & Herb
- 1 tsp garlic salt (to taste)
- 1 tsp black pepper (to taste)
- 1 sliced andouille sausage (optional)
Directions
- In a cast iron pot, cook bacon until crispy.
- If using andouille sausage, brown it with or instead of bacon—just use half the amount of bacon when you do.
- Remove bacon and set aside. Add diced onion to the bacon grease and cook until soft.
- Stir in minced garlic and cook for about a minute, just until fragrant.
- Add flour and cook for 3 minutes to make a light roux.
- Season with Cajun Seasoning and Garlic & Herb seasoning, then deglaze the pan with a splash of chicken stock.
- Add green beans and steam for 10 minutes.
- Pour in enough chicken stock to almost cover the beans. Bring to a boil, then reduce to a simmer and cook for 30 minutes.
- Stir in potatoes, cover, and simmer another 30 minutes, or until potatoes are tender.
- Season with garlic salt and black pepper, and let it cook down until most of the liquid reduces.
- Stir in the crispy bacon and adjust seasonings to taste before serving.
