This single-serve peach crisp is the perfect cozy dessert when you want something sweet, warm, and fruity, without having to share.

- Dice fresh peaches and place them in a mixing bowl.
- Add brown sugar, cinnamon, a squeeze of lemon juice, a splash of vanilla extract, and a little cornstarch. Mix until well combined.
- In a separate bowl, combine flour, more brown sugar, cold butter, and a pinch of salt. Use your hands or a pastry cutter to work it into a crumbly texture.
- Spoon the peach filling into a small ramekin or oven-safe dish. Sprinkle the crumble mixture evenly on top.
- Bake on the top rack at 350°F for about 30 minutes, or until golden and bubbly.
- Let cool slightly before digging in. Serve as is, or top with a scoop of vanilla ice cream!
