Fluffy, cheesy, and packed with flavor, these Copy Cat Starbucks Egg Bites are an easy homemade version of your favorite coffee shop breakfast.

Directions
- Preheat your oven to 300°F. Place an empty baking sheet filled with water on the lower rack to create steam.
- In a blender, combine eggs, cottage cheese, salt, and pepper. Blend for 20 seconds until smooth.
- Pour the mixture into a bowl and stir in shredded cheese and bell pepper.
- Grease a muffin pan and ladle the egg mixture into each cup, filling no more than 2/3 of the way full. Make sure each cup has a little of everything.
- Sprinkle chopped bacon evenly on top of the egg mixture.
- Place the muffin pan on the middle rack and bake for 30–35 minutes, until set.
- Allow the egg bites to cool slightly (they may expand while baking but settle as they cool). Serve and enjoy!
