Crispy on the outside, tender on the inside, these shrimp crispy rice bites deliver a perfect combination of textures and flavors. They make a fantastic appetizer or snack that’s sure to impress at your next gathering.

- Prepare the rice: Cook 2 cups of sushi rice according to package instructions. Once cooked, let it cool to room temperature. For best results, refrigerate the rice for at least 30 minutes to firm up.
- Prepare the shrimp: Peel and devein 1 lb of medium shrimp. Season lightly with salt and pepper. Chop the shrimp into small bite-sized pieces.
- Form the crispy rice base: In a bowl, mix cooled rice with 1 tablespoon of rice vinegar and a pinch of salt. Wet your hands and form the rice into small rectangular patties, about 2 inches long and 1 inch wide. Place on a lined tray.
- Pan-fry the rice: Heat vegetable oil in a nonstick skillet over medium-high heat. Add the rice patties and cook until golden brown and crispy on both sides, about 3-4 minutes per side. Remove and drain on paper towels.
- Cook the shrimp topping: In the same skillet, add a little more oil if needed and sauté the chopped shrimp until pink and cooked through, about 2-3 minutes. Optionally, add minced garlic or a splash of soy sauce for extra flavor.
- Assemble the crispy rice bites: Spoon the cooked shrimp on top of each crispy rice patty. Garnish with sliced green onions, sesame seeds, and a drizzle of spicy mayo or eel sauce if desired.
- Serve immediately: These shrimp crispy rice bites are best served warm and fresh as an appetizer or snack.
