Ingredients

  • 8 oz linguine (dry)
  • 3 garlic cloves, minced
  • 1 tablespoon olive oil
  • 2 cups cherry tomatoes, halved
  • 2 cups baby spinach, packed
  • 2 ½ cups vegetable broth
  • ½ cup ricotta cheese
  • ¼ teaspoon chili flakes (optional)
  • Salt & black pepper, to taste
  • Fresh basil or parmesan, for garnish (optional)

Instructions

  1. Heat olive oil in a large, deep skillet or Dutch oven over medium heat. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant (do not let it brown).
  2. Add the cherry tomatoes and a pinch of salt. Cook for 3–4 minutes, stirring occasionally, until they begin to blister and release their juices.
  3. Add the uncooked linguine directly to the pot. Pour in the vegetable broth and stir well to distribute the ingredients evenly.
  4. Bring the mixture to a boil, then reduce heat to medium-low. Let it simmer uncovered for about 9–11 minutes, stirring often to prevent sticking, until the pasta is al dente and the liquid has mostly absorbed.
  5. Add the spinach and stir until wilted—about 1–2 minutes. If the pot looks dry, add a splash more broth or water.
  6. Turn off the heat. Stir in the ricotta cheese until creamy and well combined. Season with chili flakes (if using), salt, and black pepper to taste.
  7. Serve hot, topped with fresh basil and/or grated parmesan for an extra touch of richness.
