Ingredients:
Directions
- In a bowl, toss together the shrimp, salt, pepper, and garlic powder.
- Preheat a pan over medium heat and add the oil.
- Once the oil is hot, add the shrimp and sear until all sides are colored, about 30 seconds per side. Remove and set aside.
- Add lemon slices to the pan and cook until seared on both sides. Set aside with the shrimp.
- To the same pan, add the onion and minced garlic. Cook over medium heat until fragrant. Stir in oregano.
- Add the orzo and toast, stirring often, for about 3 minutes or until lightly golden.
- Deglaze the pan with white wine, stirring until absorbed. Then add the chicken broth.
- Bring to a simmer, reduce heat to low, and cook uncovered for 10 minutes, stirring occasionally, until the orzo absorbs most of the broth.
- Return the shrimp and lemon to the pan. Cook for 2 more minutes until warmed through.
- Season with more salt and pepper to taste and top with fresh basil. Enjoy!
