White Bean & Avocado Toast

📝 Ingredients (Serves 2)

  • 1 can (15 oz) white beans, drained and rinsed
  • 1 tbsp extra virgin olive oil
  • 1 small garlic clove, finely grated
  • 1 tbsp lemon juice
  • 2 slices whole grain bread, toasted
  • 1 ripe avocado, sliced
  • 2 tbsp chopped fresh herbs (parsley, basil, dill, or mint)
  • Salt and pepper, to taste
  • Optional: chili flakes or a drizzle of balsamic glaze
