Instructions

1. Prep the chicken. Pat drumsticks dry. Season all over with salt and pepper; toss with olive oil.

2. Mix the glaze. In a bowl, whisk maple syrup, balsamic vinegar, garlic, Dijon, smoked paprika, and red pepper flakes.
3. Coat. Pour half the glaze over the drumsticks and toss to coat.
4. Arrange. Place drumsticks on a parchment-lined baking sheet, spacing them out.
5. Bake. Roast at 425°F for 35–40 minutes, flipping halfway.
6. Glaze again. Brush with the remaining glaze during the last 10 minutes for maximum caramelization.
7. Finish. Let rest a few minutes so the glaze thickens into a sticky, shiny coating.
8. Serve. Pair with rice, roasted veggies, or a simple salad.
