Lobster Croissant Grill Cheese
Ingredients:
Whole Grain Mustard Aioli
- 1/2 Cup Mayo
- 1 Tsp Old Bay
- 1 Tsp Lemon Juice (Fresh! )
- 1 Garlic Clove (Minced )
- 1/2 Tsp Stone Ground Mustrad
Sandwiches
- 2 Croissants (Large, slices in half )
- 1 Pack Lobster Claw Meat (I got it from Wholefoods)
- 4 Slices Gruyere
- 2 Tablespoons Unsalted Butter
Garlic Butter
- 4 Tablespoon Unsalted Butter
- 2 Garlic Cloves (Minced )
- Old Bay (Dash)

Step 1: Make the Whole-Grain Mustard Aioli
In a small bowl, whisk together the mayonnaise, Old Bay seasoning, lemon juice, minced garlic, and whole-grain mustard until smooth.
Set aside to let the flavors meld.
Step 2: Prep the Lobster
Chop the cooked lobster meat into bite-size pieces.
Lightly season with a small squeeze of lemon juice and a pinch of Old Bay or black pepper. Set aside.
Step 3: Prepare the Garlic Butter
In a small bowl, mix the melted butter with the grated or minced garlic. Set aside.
Step 4: Grill and Assemble
Heat a skillet over medium-low heat.
Place the bottom half of each croissant, cut-side down, directly onto the skillet.
Spread a layer of aioli on the croissant, add a slice of Gruyère, then the lobster meat.
Lightly brush the garlic butter directly over the lobster while it’s in the skillet.
Top with another slice of Gruyère, then place the top half of the croissant on.
Cover the skillet with a lid and cook for 3–4 minutes, until the bottom is golden and the cheese begins to melt.
Carefully flip and cook the other side for another 3–4 minutes, pressing gently, until the croissant is crisp and the cheese is fully melted.
Step 5: Serve
